Bean and Ham Bone Soup

Ingredients
  

  • 2 cups dried Navy beans
  • 1 teaspoon baking soda
  • 1 large meaty ham bone
  • 1 medium yellow onion chopped
  • 1 handful fresh carrots peeled and sliced
  • Water enough to cover the bone
  • 2 large potatoes diced

Method
 

  1. Place the dried navy beans into a large bowl.
  2. Add the baking soda directly to the bowl.
  3. Cover the beans with cold water and soak overnight.
  4. Drain the soaking water away the next morning completely.
  5. Rinse the soaked beans exactly three times with cold water.
  6. Add the clean beans into a large, heavy pot.
  7. Place the ham bone directly into the soup pot.
  8. Add your chopped onion and sliced carrots safely.
  9. Pour enough fresh water to cover the ham bone completely.
  10. Bring the pot to a simmer over medium heat.
  11. Lower the heat and simmer gently all day long.
  12. Dice the large potatoes one hour before serving dinner.
  13. Add the diced potatoes directly to the simmering pot.
  14. Cook until the potato chunks become completely tender.
  15. Turn off the heat and remove the ham bone safely.
  16. Serve hot with hard, crusty homemade Italian bread!
