Dicing fresh shrimp to pea-size for the fritter batter

Easy Shrimp Fritters

Ingredients
  

  • 1-2 lb shrimp diced to pea size
  • 1/4 cup mayonnaise
  • 1 small lemon juiced and zested
  • 1 large egg
  • 2 tbsp fresh parsley/basil/cilantro chopped
  • 1 tsp Old Bay seasoning optional
  • 1/2 cup shredded mozzarella cheese
  • 1/4 cup all-purpose flour plus more as needed
  • Salt and pepper to taste

Method
 

  1. In a medium bowl, whisk together the egg, mayo, lemon juice, lemon zest, and fresh herbs.
  2. Stir in the Old Bay (if using), salt, pepper, and shredded cheese.
  3. Add the diced shrimp and mix well to coat.
  4. Sprinkle in the flour and stir until the mixture reaches a thick, pasty consistency.
  5. Heat oil in a large skillet over medium-high heat.
  6. Scoop the batter into the pan to form patties and fry until golden brown (about 3 minutes per side).
  7. Drain on paper towels and serve hot with extra lemon wedges.
