Almond Joy Cookies

Ingredients
  

  • 2 cups shredded coconut unsweetened, one 5oz bag
  • 2 cups almonds or pecans whole or chopped
  • 1 1/2 - 2 cups chocolate chips semi-sweet or dark
  • 1 can 14 oz sweetened condensed milk
  • 1 egg white optional for better structure

Method
 

  1. Preheat your oven to 350°F and line a baking sheet with parchment paper.
  2. In a large bowl, combine the coconut, nuts, and chocolate chips.
  3. Pour the sweetened condensed milk (and egg white, if using) over the mixture.
  4. Stir well until all ingredients are thoroughly coated and the mixture is pasty.
  5. Scoop rounded tablespoons onto the prepared baking sheet, pressing down slightly.
  6. Bake for 9-10 minutes until the edges and coconut are golden brown.
  7. Let the cookies cool on the baking sheet for 5-10 minutes to firm up before moving them.
